This week exercising has been just as intense as the first week and after a nice break on Sunday to recover from being so sore, now I am sore all over again. Eating has been going pretty good. I have been getting all my proteins and carbs in at each meal that I need and drinking lots of water. I sometimes feel like I am pregnant again, I go to the restroom so many times! Megan and Joseph are finally getting better and Megan was able to return to school. She really likes school but I think she is looking forward to summer, as am I! Last night for dinner I made enchiladas. This is one of our favorites, so you will have to try it sometime.
Chicken/turkey/beef enchiladas
You can use any of these ground meats - 1 lb of ground meat
1 big can of enchilada sauce
1 cup of salsa - more or less as you like it
soft tortilla shells - I used mutli-grain for me and used just the plain flour for Brents (my kids won't eat these)
1/2-1 cup cheese
brown the meat, drain, add about 1/4-1/2 cup of enchilada sauce and add salsa to meat
simmer for about 5-10 minutes, until it is not so runny
warm torilla shells and put meat mixture onto shells, roll shells and put in pan with some enchilada sauce in the bottom of the pan. when pan is full of rolled shells, pour the rest (or as much as you would like) of the enchilada sauce over them, top with cheese and cook at 325 for about 15 minutes. Yum!
serve with salad and/or rice

Suzie,
Kristine and I are compliling some of our favorite HEALTHY recipies. I don't know if they will have Whole-Grain Wheat Tortillas? But they are still good. As soon as we can, we are going to put them on here. It is really fun to see how you guys are doing on here. I have been trying to get back into shape too! It seems like it is a spring ritual of mine. Gotta Look Good in that LITTLE bathing suit! Love ya
Hey Suzie, I just ran across you blog. Where are you doing this extreme kickboxing at. It says intense but a lot of fun. I love kickboxing and need something to kick me into gear. By the way, Austin had so much fun at your house the other day. He would love to have Joseph over here to play. We've just gotten settled. I'll have to call you and arrange something. Keep up the hard work. I am very impressed. I love your new haircut. I meant to tell you at church.
Ya know what? I pulled weeds in my garden for two hours and had such sore legs the next day. I am such a wimp! I really admire your hard work. (I haven't been back to the garden since.) About enchiladas, I'm a green girl all the way. It won't inspire you to hear how much fattening stuff I add, too. I'll try your recipe with turkey. Yum!
By the way, are you still in the primary?
Ange
